Nikujaga (Japanese Stewed Beef and Potatoes)

Ingredients

Beef (thinly sliced) 100 g
Carrot 50 g (around 1/4 of a carrot)
Onion 100 g (around 1/2 an onion)
Potato 300 g (around 2 medium)
Snow peas 12 g (around 4 pieces)
Water 180 ml
(A) Dashi Soy Sauce 2 Tbsp
(A) Sugar 2 Tbsp
(A) Salt a small amount
Vegetable oil 1 Tbsp
Salt (for parboiling snow peas) as desired

Preparation

  1. Cut beef and carrots into bite-sized pieces. Cut the onion into wedges. Quarter the potatoes, soak in water and drain before use.
  2. Pull out the tough strings of the snow peas, then boil in water with a pinch of salt. Cut diagonally in half.
  3. Heat Vegetable oil in a pot and lightly sauté the carrot, onion and potatoes. Add water and cook over high heat.
  4. When the water comes to a boil, reduce heat to medium and add Dashi Soy Sauce, sugar, salt and beef. Stir. Remove scum. Place wooden drop lid (or a sheet of aluminum foil folded into a circle with holes pierced through it) over the ingredients. Simmer until cooked.
  5. Place the snow peas on top as decoration and serve.
